HHow to set up fixed variation stock with background BOM deduction?

Hi ATUM Support,

I am struggling to get a specific workflow to work in ATUM Product Levels.

My Goal:
I sell oils in ranging from 5ml to 5 liter bottles.
They draw from one central Raw Material (e.g., a bulk vat of 25000 grams).

I want to set a fixed number of physical bottles per variation (e.g., exactly 40 bottles of 5ml and 50 bottles of 10ml etc).

When a 5ml bottle sells, the shop stock for 5ml should drop to 39 (10ml should stay at 50), and ATUM should silently deduct 5 grams from the central bulk vat.

The Problem:
Every time I link the Raw Material to the variations, ATUM completely locks the native WooCommerce stock fields (they turn grey/unclickable) and forces an automatic calculation based on the bulk weight.
Setting the variation control to 'Uncontrolled' does not unlock the fields.

How can I keep the Raw Material linked for background weight deduction, but keep the variation stock fields unlocked so I can manually input my available bottles? Is this possible?

The stock fields are locked if you enable the BOM stock Control feature:

That options makes your stock auto-calculated depending on the existing linked BOMs.

But I understood that you don't want to decrease the stock of all your final products at once because you have said "10ml should stay at 50". Is that right?
If so, the BOM stock control is not the right option for you.
Perhaps you should try the "Produce BOMs" technique instead:

So you produce the final products upfront and that will reduce your RAW material at that time and not after each sale:
