We’ve just started using the plugin and it’s exactly what we’ve been looking for, so I think it’s going to work really well! I do have one question. After syncing all the products and setting everything up, everything looks great and has exactly the functionality we need. However, is there a way to NOT display the stock quantity on the product page for customers to see? For example, showing “230 in stock” under the price on the product page.

Regarding your question, that is added by WooCommerce, not ATUM. And this is not the right place to ask.
Anyway, as this is quick, I'll give you a hint: Go to WooCommerce >> Settings >> Products >> Inventory and check this option:
