Stock not updating on purchase

I am completely confused.

Everything is variable product, all are set up with product levels, and variations are linked correctly.

Some products reducing stock levels on purchase, but some are not.

I have gone through all the settings in detail, and both are identical.

Any ideas how to fix this? I have no idea how many products this is effecting
