I've set low stock thresholds in Stock Central for some of my products. Will I get an email when a product's stock reaches this level? If so, where do I set the email recipients?

The threshold notifications are handled by WooCommerce, not ATUM. Perhaps are you looking for something like this? https://woocommerce.com/document/advanced-notifications/
