Correct me if I'm wrong, but did you mean you want to open and edit the variable products from Stock Central? If so, you need to click on the box icon to open and see the list of the variations you have.
All the fields you can see in blue color (except the name of the product which is the link) are editable, so you can change the stock value as you mentioned.
If this is not what you meant, please, I’d kindly ask you to explain it a little bit more so I can help you.
