Hi, I would like to ask. When I fill the plugin with all products and stocks, during orders it automatically reduces number of the products in the database I guess, but what if someone will order products not from the eshop but on the side, how can I enter information that there was an order out of the e-shop, and person payed for (lets say) 5 products 100$ ?TO have evience of it...

If you are talking about ATUM (free plugin), we aren't who decreases/increases the stock when any WooCommerce order is processed, it's WooCommerce itself who handles it.
However, we do these stock changes automatically when a Purchase Order is processed and you can also create an Inventory Log and change the stock manually when needed.

So when any product is sold out of the e-shop and you need to adjust it for any product, you could create an inventory log (for your own records) and change the qty from there:
