Let's go by parts.
I'm based on Spain and I am able to see just the Europe inventory, which is correct. So in order to help you maybe it would be useful if you can attach some screenshots of your settings (inventories, multi-inventory settings and Woocommerce shipping zones)

Regarding your question about replicating inventories in bulk you have several options:
- You can do this with our premium add-on ATUM Export Pro. With this add-on, you can export almost any kind of data on your site, in this case multi-inventory products, import it on a spreadsheet to add more data in a fast way, and then import it again to your site.
To create more inventories with Export Pro, first I recommend you to enable Multi-Inventory for all products (ATUM settings > Multi-Inventory). And then follow this documentation to know how to add the inventories: https://forum.stockmanagementlabs.com/d/2036-how-to-bulk-import-multi-inventories
Another option is using custom development to create three inventories by default for all your products, however, as we don't offer this service you will need to hire a developer.
In addition, you can duplicate the products. Leave one as a template and duplicate from this one. We just can make sure that it works with woocommerce feature, in other plugins that are used for duplication we can't know it as we haven't tested it.
