Since posting on the support forum, we've made a few actions to try and debug this issue. The website in question is used by one of our clients daily to run their business by a number of their employees, so we've cloned the site to a development server, to allow our team to try and troubleshoot without interrupting their day-to-day running.
On the dev-version we started with disabling all plugins and then re-enabling them one by one and monitoring the stock levels for a period of time before moving to the next. We've worked through all the plugins on that site and it's only when ATUM is re-activated that we start experiencing the bug again.
So our team have been manually checking for out of stock variants a number of times a day to ensure our client doesn't experience a loss in sales due to products showing out of stock when they really aren't.
The bug only effects products that are variable, and as we mentioned in our previous messages, if the product shows as out of stock and an admin goes into the product in the wp admin panel and updates it, it shows in stock again, regardless of the actual stock level.
We do understand that there is a possibility that the error could be cause by ATUM in conjunction with another plugin, but we've yet to find evidence of this in out investigation, the only constant we have found is that if ATUM is disabled the error doesn't happen.
We'd love to get to the bottom of this, as our client is growing more impatient every day, any help you could provide would be welcomed greatly.
