I don't know if I understand exactly what you mean. Actually, the point of using the Out of Stock Threshold feature is that the product is displayed as out of stock when it reaches the out of stock threshold value assigned to these product. There can be several reasons why a seller would like to set this value. However, this is something you already can do with just Wocommerce installed, the difference of having ATUM installed is that you can set a different out of stock threshold value for each product if you enable this feature. With Woocommerce is a general value for all the products.
In the other hand, if you get into a product, in Inventory tab you can set a low stock threshold for the product, so you will be notified by email when the stock of the product will reach these number; but this have nothing to do with as it is already a Woocommerce feature.
